I’ve been making smoothies of all kinds for the last fifteen years and there are still ingredients I have yet to try, like beets. I learned of this recipe from my wellness team leader and decided it wouldn’t hurt to try, considering I actually like beets and have already experimented with beets and chocolate in a brownie recipe. That one was just alright, but I have plans to try again with my own tweaks.
I’m not a fan of red velvet anything but I’m always open to trying new recipes, within reason. This decadent Red Velvet Smoothie features creamy Chocolate Shakeology, tangy balsamic vinegar, and fresh beet juice for that classic crimson hue.
I used what I had on hand, substituting homemade hempseed milk for the almond milk, five slices of canned beets, which I find to be much easier than scrubbing and cooking beets, and kefir for the mascarpone. My version wasn’t particularly sweet. I didn’t measure the kefir or the vinegar and that may be why. The beet taste was there but wasn’t overwhelming. I expect the taste will vary depending on the size beet you use.
Smoothies are a great way to increase one’s intake of whole foods and maximize nutrient intake. I’ve been adding Shakeology to my smoothies for over a year and have noticed increased energy and stamina, especially during my workouts.
- 1 cup unsweetened almond milk
- 1 cup ice
- 1 scoop Chocolate Whey Shakeology
- 1 medium cooked beet, peeled, cooled, coarsely chopped
- 1 Tbsp. mascarpone cheese
- ½ tsp. balsamic vinegar
Blend all ingredients until smooth. This recipe was made in a Blendtec
